101 Ways with a Jacket Potato!


Ah, the humble baked potato. Can there be a more versatile, yummy option for lunch? Especially with so many delicious baked potato toppings and recipes to try out on them!

The perfect baked potato has a crispy jacket, a hot, soft centre, and is oozing with melted butter... sigh! It's delicious on its own, and super healthy to boot, but the jacket potato can be SO much more amazing!

You can top it with just about anything; from simple to sumptuous... when I was pregnant with my daughter, I was super hungry at lunchtime but wanted to eat something that was both satisfying and healthy. I had even more of a thing for jacket potatoes than I do normally, but was getting bored of the same old cheese, ham or prawn combos. So I explored all kinds of different topping ideas, using my favourite foods, healthy things to eat in pregnancy and ways to use up leftovers as inspiration!

You truly could think up a different spud for every day of the year... but for now, here are 101 brilliant ideas for baked potato toppings to get you started!

How to Bake the Perfect Spud

Copyright Jupiter Images CorporationI use the Delia method - wash and scrub your potatoes and dry thoroughly, before pricking randomly with a fork. Rub a little olive oil into the jacket along with some sea salt, and pop into the oven (middle shelf) at 190 degrees C (375 F, Gas Mark 5) for between 65 and 80 minutes, depending on the size of the potato.

If I'm watching my salt intake I just use the olive oil.

Ideal potatoes for baking are King Edward, Red Desiree and Maris Piper.


 

Easy Peasy Classic Baked Potato Toppings

Simple but Satisfying Baked Potatoes

1. Cheese
Cheese, glorious cheese! It may be the most basic of baked potato toppings but it sure does taste good, melting into that fluffy potato and mixing with all that lovely, oozing butter!

Your basic cheese topping staple would, of course, be good old cheddar, but experiment with different cheeses or even create a multitude of cheeses! Try Parmesan, Gruyere, Red Leicester, Yarg, Brie... you can go for soft cheese as well as hard cheese, or why not try goat's cheese as another alternative?

2. Baked beans
Another baked potato classic! Delicious, filling and very good for you too. I like mine with grated cheese sprinkled on top, how about you?

3. Ham and Cheese
Perk up your cheese topping with some ham! And come on, you can do better than one of those barely-there thin ham slices - treat your potato with respect and pop on a roll of lovely, thick, quality ham! Breaded, honey roast... you choose!

4. Prawns

One of my personal favourites! No prawn jacket is complete without that beautiful pink sauce, however! Also known as Thousand Island Dressing, you can make your own Marie Rose sauce by mixing one part ketchup to six parts mayonnaise, and adding any other elements that you like personally in the sauce, such as a tablespoon of lemon juice, a dash of Tabasco or Worcestershire sauce, or even a dash of whisky!

5. Sausage and Beans

Grill a sausage or two, slice and mix into your hot baked beans before pouring all over your freshly baked jacket. For extra melt in the mouth gorgeousness, sprinkle with grated cheese.

6. Coleslaw

Coleslaw is an easy and delicious potato topping - just scoop it straight from the pack! Alternatively, you can make your own delicious coleslaw using a recipe such as this BBC Healthy Coleslaw, or add a twist with this Lemon Coleslaw Baked Potato Topping!

7. Cheese and Bacon

34. Cheese and Chives

Bake your potatoes as normal. When they are just about done, take them out, cut in half and sprinkle with grated cheese (Cheddar, Lancashire, Cheshire, Parmesan... the choice is yours!) before popping back in the oven until the cheese has melted. Serve with chopped chives sprinkled on top. (A nice alternative to chives is spring onion)

35. Egg and Cress

Did you know that salad cress is good for your kidneys, metabolism and eyes? Combine with hard-boiled eggs (peeled and chopped, and served warm) and mayonnaise to make a scrumptious potato topping.

According to the American Century Cookbook, the first Waldorf Salad was created in New York City in 1893, by the maître d'hôtel of the Waldorf Astoria. The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise, with chopped walnuts later added. An alternative to using mayonnaise is to make this classic with yoghurt. Gill some bacon, chop it up and mix with pineapple chunks and either mayonnaise or cottage cheese

Mix a thick, natural yoghurt with chopped red onions (or any other salad ingredients of choice), and add salt and pepper to taste.

Baked Potato and Vegetable Heaven

61. Roasted Vegetables

Ingredients:

1-2 Large potatoes
1 each of red, green and yellow peppers cut into chunks
1 Medium red onion, sliced
1 Aubergine, peeled and diced
Small handful of Black Olives (halved)
Olive oil
2 Crushed garlic cloves
Sprinkle of mozzarrella
Black pepper to taste

* Start baking the potatoes in the oven.at 190 C or Gas Mark 5.

* Toss together the peppers, red onion, olives and aubergine, and arrange in a small baking tray. Drizzle with olive oil, add the crushed garlic, and sprinkle a little cracked black pepper. Put into the oven, uncovered, on the top shelf next to the potatoes. Leave for 20-30 minutes

* Cut the potatoes in half, arrange the roasted veg on top, sprinkle with grated mozzarella (pop back into the oven for a few minutes to help the mozzarella melt!)

Alternatively, roast green, yellow and red peppers with courgettes, aubergine and tomatoes in a drizzle of olive oil, before mixing with Wensleydale, goat's cheese or cream cheese, and some sticky onion relish or onion marmalade.

62. Med Veg Medley

Another super healthy, fabulous vegetable topping is this one. Use a great Mediterranean Vegetable Medley Recipe and top a hot baked spud with the results!

63. Salad Mix

Bake your potato, scoop out some of the soft potato flesh from the top and mix with 1 tbsp chopped cucumber, 1 tbsp chopped apple, 1 tbsp. chopped fresh mint and 2 tbsp Crème Fraiche. Add salt and pepper, and spoon on top of your tat!

64. Goats Cheese and Spinach

Goat's Cheese has a gorgeous flavour and works really well in tarts, salads and starters. It also works magnificently with jacket potatoes, and in this instance, combine with baby spinach leaves for a really tasty meal.

65. Pesto

Ingredients:
4 baking potatoes
salt and pepper
150ml double cream
150ml vegetable stock
1 tbsp lemon juice
2 crushed garlic cloves
3 tbsp chopped basil
2 tbsp pine nuts
2 tbsp grated Parmesan cheese

* Serves 4 people. Prepare the potatoes as per the instructions at the top of this page. Bake at 190 degrees C until cooked through with crispy skins.

* Cut the potatoes in half and scoop out the potato into a mixing bowl (leaving a thin shell of potato inside the skins) and mash with a fork

* Mix the cream and stock in a saucepan and simmer for about 10 minutes over a low heat (or until reduced by half).

* Stir in the garlic, lemon juice and basil, before seasoning to taste. Stir the entire mixture into the mashed potato along with the pine nuts, and spoon back into the potato skins.

* Sprinkle Parmesan cheese over the top and pop back in the oven for 10 minutes until the cheese has browned slightly.

66. Asparagus, Rocket and Parmesan

Blanche or steam your asparagus for a few minutes or until tender. Pop a handful of fresh, washed rocket leaves on your baked potato, place the asparagus on top, and finish with large flakes of grated Parmesan.

Sautee some portabellini or chestnut mushrooms in a pan of melted butter (about a tablespoon full). Add crushed garlic to the pan (1-3 cloves depending on how strong you like the garlic taste) and cook until the mushrooms are soft and nicely browned. Add to your potato while hot hot hot!

Chop your spring onions, and grate some cheddar, Gruyere and Lancashire cheeses. Mix the cheeses and spring onions together, halve your baked potato and cover with the mix. Melt back in the oven for a few minutes before taking out, and sprinkling with grated Parmesan. Alternative cheeses include cottage cheese, cream cheese, Red Leicester and any number of Cornish cheeses.

When is a Potato Not a Potato?

73. Baked Sweet Potato

An alternative to the normal jacket potato is the sweet potato, which bakes to a soft and sweet pulp. Bake in a similar fashion to normal potatoes - scrub clean, and bake at 190 C/Gas Mark 5 until soft. Baking time varies depending on the size of the sweet potato, but a rough guideline is 30 minutes for a small one to 60 minutes for larger. Serve with a little oil or butter, indulge in Baked Sweet Potatoes with Cream, or try a nice vegetable topping recipe such as this:

74. Baked Sweet Potato with Sweetcorn and Green Beans

Ingredients:
4 sweet potatoes
4oz frozen broad beans
4 oz frozen sweetcorn
4 oz long green beans
5 oz tomatoes
1 tbsp olive oil
1 tbsp balsamic vinegar
freshly ground black pepper
2 tbsp torn fresh basil leaves, plus extra to garnish

* Serves 4 people. Prepare the sweet potatoes by scrubbing and piecing with a sharp knife in several places. Bake at 190 degrees C for around an hour, or until soft and tender when pierced.

* Once cooked, turn the oven off but leave them in to keep them warm. Bring a saucepan of water to the boil. Add the broad beans and sweetcorn, returning to the boil before covering and simmering for around 5 minutes.

* Trim the green beans, halve and add to the saucepan. Bring back to the boil, cover and simmer for 3 minutes or until the green beans are just tender.

* To make the dressing, blend the oil and vinegar in a bowl and season with the pepper.

* Drain the vegetables and return to the pan, adding the tomatoes and covering with the dressing. Add the basil leaves and mix together.

* Remove the sweet potatoes from the oven, cut in half and divide the filling between them. Garnish with more basil leaves.

94. Mr Potato Head

Get creative and have fun making your own Mr Potato Head! Cut a baked potato in half, take out most of the potato and mix with your chosen filling, such as cheese, tuna, bacon bits or whatever you or the kids fancy. Chop the narrower tops off the potato halves.
